Tomato Goodness

This is my all time favorite food. I could eat it all day, everyday.

Ingredients:

5 sliced tomatoes (or as many as you want)

2 cloves garlic finely diced

2 green onions thinly sliced

3 basil leaves thinly sliced- I stack all my leaves up and then roll them and very careful cut strips with my kitchen sheers directly over the sliced tomatoes

equal parts Olive Oil, balsamic vinegar, and champagne vinegar for this amount of tomatoes I did 3 tablespoons. I normally do double the amount because I love to soak it up with bread.

A pinch of salt and sugar

A loaf of your favorite bread sliced into 1/2” pieces , mine is a soft French bread from our local market.

Arrange your sliced tomatoes on a platter, one that is relatively deep and can hold the dressing. Sprinkle the tomatoes with sugar, salt, garlic, onion, and basil. Then drizzle the Olive oil, balsamic and champagne vinegar over all the tomatoes. Let rest for 20 minutes or eat right away. The longer it sits the better it tastes.

I like to dip my bread in the dressing and then place a tomato right in the middle of my bread. Yummy! It makes me want to go in the kitchen and make some up right now.

add a slice of fresh mozzerella to the bread top it with the tomatoes and heat it up in the oven... it's over the top good... you will gorge yourself!

Holycow! I've got some left in the fridge from Saturday! I know what i'm having for lunch. Just wish I had some bread, too. Maybe you should make some more and come over. :)))

Champagne vinegar is just perfect for making simple vinaigrettes like this, and isn't simple food with great ingredients the best? Now if I could just get some decent tomatoes!
